Wubble, this is really nice of you.
These recipes all sound REALLY good. Mind you, I only have four sweet potatoes left, so I'll have to get some more to try all of these recipes. I don't mind, though, as I happen to think sweet potatoes are one of the best foods on Earth. Even when I messed up the twice-baked sweet potatoes with peanut butter because of my inexperience with baking, it was still good.

Ingredients

knob of butter

Method
1. Heat the oil and butter in a pan and sweat the potato with the pepper and onion for 5-6 minutes, to soften. Stir in the cumin seeds.
2. Pour in the stock, bring to the boil then reduce the heat and simmer gently for 8-10 minutes.
3. Transfer to a blender and blend until smooth, adding the cream and seasoning. Return to the pan and warm through for a few minutes. |

Cut them like chips - friench fries, for those that think chips comes in little packets.
Deep fry them untill crispy outside and tender inside.
Put on paper towels to drain all the fat off and serve with fresh plain yoghurt mixed with cream cheese or sour cream and chives, dipping sauce.

Sweet Potato Curry
This curry works with sweet potato or pumpkin/squash.
4 tbs Gee (you can just use a mixture of butter and oil if you would rather)
4 oz Onion puree
2 tbs Coriander powder
1tsp Cumin powder
1 tsp Turmeric
1 tsp Garamasala
1 tsp Paprika
1 tsp Fenugreek
150 ml Milk
2 tbs tomato puree
Dice and roast your sweet potato/squash/pumpkin in the oven
Boil your onions until soft then blitz into a puree
Fry the onion with the gee (butter/oil mix) with the spices (I'm thinking garlic should probably be in there too)
Slowly add the milk bit by bit while stiring
Add the tomato puree (personally I would use less than 2 tbs)
Add your roasted veg
Thin to the consistency you want with extra water
Season with salt
Et voila! Serve with rice.
It is actually way nicer than I make it sound.
From a health perspective, sweet potato is better for you than regular potatoes because it has a lower GI. _________________ To view all of my newest stories please visit:

They are awfully good just baked. I grew up only eating them in the traditional american thanksgiving casserole with loads of butter and brown sugar and those little marshmallows. Now i like them baked or grilled.
Tink, the Spanish tortilla recipe sound yummy though too... i bet it would be good with some chorizo sausage. This thread is making me really hungry. I think i have a few sweet potatoes in the cupboard, if they are still any good, so maybe i'll have to experiment...
oh, and sweet potato chips/fries are also yummy if you can keep them going soggy. _________________ keep your sunny side up  |

Fluffy sweet potatoes with marshmallows.
A sweet potato casserole with marshmallow topping.
Ingredients:
3 cups cooked mashed sweet potatoes
2 tablespoons butter
1/4 cup orange juice or milk
1/2 teaspoon salt
1/3 cup marshmallow creme
1 egg, well beaten
1/2 to 1 cup miniature marshmallows
Preparation:
Combine sweet potatoes, butter, orange juice or milk, salt, and 1/3 cup of the marshmallow creme. Beat in egg. Pile sweet potatoes in a lightly buttered baking dish. Bake at 400° for 25 minutes. Top with miniature marshmallows and brown under broiler for about 4 minutes. Serves 4 to 6.

Sweet Potato Spanish Tortilla
Makes 8 servings.
Ingredients
4 medium sweet potatoes
1/4 cup light olive or vegetable oil
1 clove garlic, finely chopped
1 medium white onion, finely chopped
2 (3-inch each) Jalapeno peppers, seeded and finely chopped
3 tablespoons parsley, minced
2 tablespoons fresh cilantro, minced
Salt and Freshly Ground Pepper, to taste
6 large eggs
Preparation
Peel sweet potatoes, cover with water in a large pot. Boil gently for 20 minutes until potatoes are just tender. Do not overcook. Drain well in a colander. When cool, cut into half-inch rounds. Add 2 tablespoons oil to a large 12-inch non-stick sauté pan or skillet. Sauté garlic, onions and peppers until wilted. Add remaining oil to pan and sauté sweet potato rounds until lightly browned. Combine parsley, cilantro, salt, pepper and eggs in a large bowl and whisk until eggs are well blended. Add to sweet potato mixture. Cook until eggs are set. Cut tortilla into 8 wedges. Serve hot.
